Pumpkins are more than just a vibrant Halloween decoration, they are great to eat. Almost all parts of the pumpkin can be eaten, including the flesh and seeds. Pumpkins are a good source of fibre and protein, as well as providing a range of essential minerals and vitamins. They can easily be incorporated into both sweet and savoury dishes.

Pumpkin & Almond Muffins
