Looking for an inspirational alternative to mashed potatoes? Try this pumpkin and potato mash –the sweetness of the pumpkin makes this a delicious side-dish. Not only that, but it is packed full of vitamins for a healthy boost.
1. In a large pan, boil the pumpkin and potato chunks, until soft and easy to mash, approximately 20 minutes.
2. Drain the water and mash the potato and pumpkins, adding the milk for extra smoothness.
3. Season with Herbamare and black pepper, and serve with fresh parsley.
