Puréed Vegetable Soup (212kcals)

This super-simple soup is packed full of nutrients but low on calories – just 212 per portion! It provides a great dose of vitamins and minerals, while the bioSnacky sprouts topping provides an extra nutrient kick, as well as some extra protein. Top tip: double the recipe to get another portion for the next day!

Ingredients

  • 1 clove garlic, crushed
  • ½ small onion, diced
  • 400g mixed vegetables: broccoli, cauliflower, carrot and celery, roughly chopped
  • 1 tsp olive oil
  • Organic vegetable bouillon powder made up to make 500ml stock
  • 10g bioSnacky sprouts of choice for a crunchy topping
  • Herbamare and black pepper to season

How to make Puréed Vegetable Soup

1. Sauté the garlic and onion in the olive oil for a few minutes, until slightly golden.

2. Add the vegetables then the stock, and simmer for around 15-20 minutes.

3. Purée the soup with a hand blender and season with Herbamare, pepper and herbs.

Serve and enjoy.
