Hot Pecan Leafy Salad (217kcals)

This delicious salad is super light and refreshing. The peppery rocket and balsamic vinegar perfectly complement each other, while the sprinkling of warm pecans and cranberries provide an extra boost in energy and nutrients. At just 217kcals, it’s a great addition to healthy detox plan.

Ingredients

  • 10g pecans
  • ¾ tbsp balsamic vinegar
  • ¾ tbsp olive oil
  • Sprinkling of Herbamare
  • Freshly ground black pepper
  • 250g rocket or watercress or a mixture of both
  • 10g dried cranberries

How to make Hot Pecan Leafy Salad

1. Spread the pecans on a baking tray and cook at 180C for 12 minutes.

2. Place the salad leaves in a bowl and mix through the olive oil, balsamic, cranberries, Herbamare and pepper.

3. Top with the still-warm pecans, serve and enjoy.
