A hearty and nutritious family meal, this veggie stew is very simple to cook and packed full of goodness. To make it extra filling you can serve it with wholegrain rice, pasta or a nice fresh salad.

Ingredients

Vegetarian Tomato Stew

  • 4 tomatoes, peeled and cubed
  • 200g fresh mushrooms, chopped
  • 150g onions, chopped
  • 2 cloves garlic, crushed
  • 4 tsp olive oil
  • 200g carrots, cut into strips
  • 1 tbsp Herbamare® Bouillion vegetable stock
  • 250ml water
  • 150g cabbage, finely sliced
  • 4 tsp soured cream
  • Juice of ½ lime
  • 2 tsp marjoram, chopped
  • 1 tsp Herbamare® Original seasoning salt

How to make Vegetarian Tomato Stew

1. Cook the tomatoes, mushrooms, onions and garlic for a few minutes in the oil.

2. Add in the carrots, Herbamare® Bouillion vegetable stock and water, and leave to simmer for 10-15 minutes with the lid on.

3. Add the cabbage, and leave to simmer for another 5 minutes.

4. Remove from the heat and add in the soured cream, lime, marjoram and Herbamare® Original seasoning salt.
