Herby Lime & Butter Bean Patè Vegan & GF

A zesty dip made with butter beans, this easy-to-make vegetarian patè is deliciously creamy. Serve with oatcakes, crackers or with vegetable sticks for a lovely refreshing and energising snack. This lovely dip is also gluten-free and suitable for vegans.

Ingredients

Herby Lime & Butter Bean Patè Vegan & GF

  • 1 tsp coconut oil
  • 1/2 small onion, chopped
  • 1 garlic glove, chopped
  • 1 tin butter beans, drained and rinsed
  • Generous handful of fresh coriander and the same of parsley
  • Juice of 1 lime
  • 1-2 tblsp olive oil or rapeseed
  • Sea salt or black pepper (You could use Herbamare® Original seasoning salt)

How to make Herby Lime & Butter Bean Patè Vegan & GF

1. Gently heat the coconut oil in a small pan and soften the onion and garlic over a low heat.

2. Put this onion and garlic mixture into your food processor with the butter beans, herbs and lime juice.

3. Switch the processor on and pulse the ingredients together, drizzling the olive or rapeseed oil in through the top of your food processor as you go. Stop when you have your desired consistency. Season well.

4. Serve on oatcakes or rye crispbread, or with vegetable sticks.
