Broccoli is a super nutritious vegetable on its own, and when combined with butter beans the two make an ultra-healthy meal! Intro: This is one of my favourite easy meals! It’s so refreshing and light, but the butter beans provide plenty of protein and complex carbs to fill you up and give you energy. Definitely one to make when you’re running short on time!
1. Wash and trim the broccoli and cut into 2cm pieces. Blanch in boiling water for 3 minutes, then drain and leave to cool.
2. Next, in a dry, non-stick pan, add the oil and sauté the shallot, garlic and chilli, shaking the pan so that they don’t stick and season with the Herbamare and black pepper.
3. When they are soft, add the butter beans and lemon zest.
Mix well and sauté for a further 3 minutes.
4. Add the broccoli, mix well and drizzle with the lemon juice.
Top with the pine nuts, serve and enjoy.

The butter beans in this recipe add extra protein and complex carbohydrates to provide slow-releasing energy. They’re also a good source of iron, which is great news for veggies and vegans!
